Biftdu Gudina was established in 2012, and is one of the best representations of what 6 years of cooperation between Tecnoserve staff and member farmers can do. The Coop now 150 members, and processes with an eco-pulper, full-immersion soak and raised-bed drying. It's an art and a science over here, resulting in a complex cup. Look for a honeyed, jasmine break with bright tangerine citrus with a winey body and intense clarity.

Overall Impression: 8.75

Very smooth and sweet in the onset that lingers for a very short time and is replaced by an off flavor aftertaste. This was the main disappointing feature of this Lot. Initial flavor and body is excellent!

Wonderful, felt like the development of this bean while roasting was easier to nail down yielding more precise flavors in the final cupping especially compared to the Ethiopian Bajaj which I found to be overdeveloped when roasting with a similar profile. While both were very good this, the Biftu, and the Kossa, excelled in the Ethiopian category. My favorite part of this cupping was a translation of a somewhat berry aroma to a more citrusy-floral taste-smell when sipped.
